Last night in my baking frenzy I used a recipe under the lid of the box of Oatmeal. It called for raisins, but I had little snack boxes of dried mixed fruit on a shelf in the pantry, so I used those. Oh my! Delicious!
Selena’s Oatmeal Cookies
(Makes about 2 dozen)
- 1Â stick of butter
- 1/2 cup of dark brown sugar
- 1/4 cup of granulated sugar
- 1 egg
- 1/2 teaspoon vanilla
- 3/4 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1-1/2 cups uncooked oatmeal
- 2 boxes (1.25 oz each) of dried mixed fruit
Heat oven to 350 degrees Farenheit.
Beat together butter and sugars until creamy.
Add egg and vanilla, beat well.
Combine the flour, baking soda, cinnamon and salt. Add to the creamed mixture and mix well.
Stir in the oats and mixed fruit, mix well.
Drop by rounded tablespoonfuls onto ungreased cookie sheet. Bake 10 to 12 minutes.
