Chicken Alfredo is so easy if you buy a rotisserie chicken and take the pieces you need from that. Usually I buy a rotisserie chicken from Sam’s Club, because the chickens are huge and the price is cheaper than any of the conventional grocery stores. One large chicken can make 3-4 meals for me. This is enough Chicken Alfredo to serve 2-3 people.
- Using an electric mixer, beat 1 stick of butter and 1/2 cup Parmesan until creamy.
- In a large pot of boiling salted water, cook 1/2 box of fettuccine according to package instructions until al dente, about 12 minutes. Reserve about 1/4 cup of cooking water; drain pasta.
- Return fettuccine to warm pot. Toss pasta with 1/2 teaspoon salt, cheese mixture, and 1/8 cup of the pasta water. Add 1 cup of cooked cubed or large pieces of shredded chicken. Add more pasta water, as needed. Serve with additional cheese, a side salad and garlic bread.
